Pumpkin Cake/Bars 4 eggs beaten 1 c salad oil 2 c sugar 15 oz. can pumpkin 1/2 t salt 2 t cinnamon 1 t baking soda 1 t baking powder 2 c flour optional: 1 c raisins or nuts Preheat oven to 350 degrees. Grease and flour 13x9 cake pan (or, for bars, a 13x9 and and 8x8, or 3 8x8's). In large mixing bowl, beat eggs. Add oil and beat. Add sugar and beat. Add pumpkin and beat. Add salt, cinnamon, baking soda, baking powder and flour and beat. If making bars, split batter into pans, for cake put all of batter into 13x9 pan. Bake 35-40 minutes at 350 degrees, until cake pulls away from the edges. Frosting 2 c powdered sugar 3 oz. cream cheese, soft (room temp.) 6 T butter or margarine 1 t milk 1 t vanilla Beat together all ingredients and frost cooled cake/bars. M.M.
